Mac and cheese is one of my favourite meals to whip up when I'm too lazy to spend a long time in the kitchen. Taking about 30 minutes to prep and bake, it's a staple dish at my place. Over the years, I've added and played around with the ingredients (hence the leeks and pancetta additions) so that it is a bit more than simply macaroni pasta covered in cheese.
